Electric caviar from the Aran Valley: a gourmet and sustainable product
Caviar from Les is one of the most exclusive and appreciated products in world gastronomy, but it is seriously threatened by overfishing and pollution. For this reason, an increasing number of producers are choosing sustainable aquaculture to raise sturgeons and obtain their precious roe without damaging the environment or biodiversity.
One of these producers is Nacarii, a company located in the Aran Valley, an area of the Catalan Pyrenees with spectacular landscapes and a rich culinary tradition. Nacarii takes advantage of the hot water from a combined cycle power plant to maintain an optimal temperature for sturgeons, which are fed naturally and ecologically in pools located next to the Garonne River.
The sturgeons raised by Nacarii are of the species Acipenser baerii, native to Lake Baikal (Siberia) and which adapts very well to the climate and water of the Aran Valley. These fish can weigh up to 60 kilograms and live between 15 and 20 years, but only females produce caviar from the seventh year of life onwards.
To obtain caviar, Nacarii experts perform an ultrasound on each female to determine the maturation degree of the roe and the optimal moment to extract it. Next, an artisanal salting process is carried out following traditional Iranian methods. It consists of adding a minimal amount of salt (between 3 and 4%) to preserve the caviar without altering its flavor or texture.
The result is a fresh caviar, unpasteurized and not subjected to any heat treatment, which maintains all the organoleptic properties of the original product. Nacarii caviar is presented in cans or glass jars of different sizes, from 10 to 500 grams, and you can choose between four varieties: Tradition (dark gray color and intense flavor), Selection (light gray color and soft flavor), Premium (golden color and delicate flavor) and Ecological (certified by CCPAE).

A product that cannot be missing from your home
You can enjoy Nacarii caviar on its own (with a mother-of-pearl or wooden spoon) or accompanied by toasted bread, butter or sour cream. You can also pair it with champagne, white wine or vodka. The important thing is to keep it refrigerated until the moment of consumption and serve it cold, but not frozen, to better appreciate its aroma and texture.
